MOST IMPORTANT RULE: HAVE FUN!!!
There will be NO MEAT INSPECTION! You can begin preparing and barbecuing your ribs as soon as you are ready.
Mandatory Contestant meeting held at 9:00 a.m. in the grass area of the downtown park located at the corner of South 1st & East A Streets. Tracy Allen, our head judge, will go over the rules and answer any questions you may have.
Your turn-in boxes will be distributed by Tracy at your team space after the meeting. Please remember this is an 8-RIB minimum competition for judging.
There will be two turn-in times: 2:00pm & 2:30pm. Your turn-in time will be written on the turn-in box along with your team number. Do not make any marks on the turn-in box. If your box gets damaged in any way, please see Tracy in the judging room for a replacement.
NO GARNISH or anything else (e.g., foil, vegetation, pooled sauce) in the turn-in box with the ribs.
SAUCE is OPTIONAL! If used, it must be applied directly to the meat and is not to be pooled or puddled in the container.
While this is not a KCBS sanctioned event, we do follow most KCBS guidelines, which you can find on kcbs.us. You can also find YouTube videos about anything to do with Competition BBQ. The judges are very experienced and follow standard KCBS scoring guidelines.
Your ribs are judged in three categories: Appearance (10%), Taste (55%), Tenderness (35%) (approximate weighted values).
AWARDS CEREMONY SCHEDULED AT 4PM from the entertainment stage in the same park where the Contestant meeting is held.
